Raspberry Chocolate Protein Muffins

We went berry picking yesterday and the farm suggested we use our raspberries quickly so they don't spoil. I instantly had the idea to bake some raspberry explosion muffins.

These are not your typical muffins.

They are low in sugar, made with clean real food ingredients, are bursting with raspberry goodness and they taste great!

It was a new recipe (based on what I had in the pantry and fridge) so I wasn't sure how it would go. I asked my favourite taste testers for their opinion before sharing it here with you.

My hubby said, "they were delicious and scrumptious'" and called them explosive raspberry goodness.

My daughter said "they were the best muffins I ever made."

Here's the recipe:


3 ripe bananas (mashed)

Honey (1/4 - 1/2 cup)

1 egg

I scoop Vanilla protein powder

1/2 cup sour cream + 1 tsp vanilla (I usually use vanilla greek yogurt but I didn't have any)

1 cup - 1.5 cup rolled oats (grind into flour)

1-2 cups of fresh raspberries

1/4 cup dark chocolate chips


Mash bananas into a bowl.

Add honey and egg. Mix well.

Add protein powder, sour cream and vanilla or use vanilla greek yogurt. Mix well.

Add Oats and mix again.

Fold in raspberries and chocolate chips.

Preheat oven to 350'. Place parchment paper muffin cups into each muffin space and divide the mixture equally. Push 3 whole raspberries into the top of each muffin.

Bake for 20-30 minutes. A knife inserted should come out clean when they are done.

And, that's it! Let them cool and enjoy!
