Healthy Banana Pancakes

Let's make gloriously healthy, fluffy, pancakes!
Pancakes are one of those recipes that most people consider a "treat" but that's not the case if they are made with delicious whole food ingredients.
Actually, I don't like to think of any meal as a "treat".
I think their should be room in your life to occasionally enjoy the "not so healthy foods" you love and I also think it's important to learn how you can make the "not so healthy foods" you love, healthier.
This way it's a win-win situation every time you eat and you never feel restricted or deprived on your healthy living and weight loss journey.
It's important to fuel your body with the nutrients it needs to feel satiated and energized all day long. These healthy banana pancakes are perfectly balanced with whole foods and nutrients and they can be enjoyed for any meal of the day.
Healthy Banana Pancakes
Ingredients: Yield (one serving)
1/3 cup oatmeal
1 tsp apple pie spice (or you can use cinnamon)
1 tsp vanilla extract
Coconut oil (or other oil)
1 Tbsp natural nut butter
Add the banana, eggs, oats, spice and vanilla to a bowl or blender and mix well. I use a hand held immersion blender for mine. Heat oil over low to med heat in a frying pan. (A good quality frying pan is key here!) I have upgraded mine many times to find ones that I love to cook with. Pour 3 pancakes into the pan and patiently wait until they are ready to flip. Don't jump the gun here! They should form bubbles on top and easily release when you use your flipper. When ready, flip and cook for 1-2 minutes on the other side and transfer to a plate. Cook the rest of the pancakes (I get 6) and then top them with natural nut butter or some real maple syrup if you prefer.
